Barley is a versatile cereal grain that resembles wheat berries in appearance, but its color is more like the color of oats. When cooked whole, barley has a nice chewy texture and a slightly nutty flavor. Add it to soups, or include barley in a pilaf with other whole grains such as rice, wild rice, and quinoa . Or mill barley into flour and substitute up to 1 cup in your favorite bread recipe. Barley contains gluten.
